Pumpkin Crinkle Cookies

Ingredients
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¾ teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup firmly packed light brown sugar
- ½ cup granulated sugar
- 3 large eggs, room temperature
- ½ cup pumpkin puree (unsweetened - not pie filling)
- 1 teaspoon pure vanilla extract
- 4 tablespoons unsalted butter, melted and cooled
- ⅔ cup granulated sugar, for rolling
- 1 cup powdered sugar, for rolling
Instructions
- Preheat oven to 325 degrees. Line 2 large baking sheets with parchment paper and set aside.
- Melt the butter and set aside to cool.
- In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt and pumpkin pie spice. Set aside.
