Soft and sweet, with plenty of pumpkin flavor and loads of pumpkin pie spice.

Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¾ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup firmly packed light brown sugar
  • ½ cup granulated sugar
  • 3 large eggs, room temperature

  • ½ cup pumpkin puree (unsweetened - not pie filling)
  • 1 teaspoon pure vanilla extract
  • 4 tablespoons unsalted butter, melted and cooled
  • ⅔ cup granulated sugar, for rolling
  • 1 cup powdered sugar, for rolling

Instructions

  • Preheat oven to 325 degrees. Line 2 large baking sheets with parchment paper and set aside.
  • Melt the butter and set aside to cool.
  • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt and pumpkin pie spice. Set aside.
